Habe mal schnell roundcube auf meinem E64-Buildserver installiert, als php8-
Engine hier auch apache2_php8 - Konfiguration wird korrekt durchlaufen:

Activate configuration now (y/n) [yes]? 
version (eisfair-64): 1.8.3
Database type  : sqlite
Database server: localhost
SQLite3 PHP8-WEB support: enabled
SQLite3 PHP8-CLI support: enabled
PHP8-WEB APC cache: enabled
PHP8-WEB Redis cache: enabled
PHP8-CLI APC cache: enabled
PHP8-CLI Redis cache: enabled
Redis support: enabled

Mir fällt aber gerade auf, dass du ein altes roundcube-Paket einsetzt.

1.7.14 ist es bei dir, aktuell ist es aber 1.8,3.

Hast du den Server nicht gerade neu aufgesetzt?

Wenn dein System nicht auf aktuellem Stand ist, erledige das zuerst, bevor 
wir weiter suchen.
